Ingredients
  

  • 2 pounds beef stew meat, cubed Use high-quality beef for best results.
  • 3 medium potatoes, peeled and cubed Fresh, seasonal vegetables recommended.
  • 2 medium carrots, peeled and sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine or additional beef broth Red wine adds richness, but can be substituted.
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf Remove before serving.
  • to taste Salt and pepper

Instructions
 

  • Add all the ingredients to a slow cooker and stir to combine. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the meat is tender and the vegetables are cooked through. Remove the bay leaf before serving.
