Ingredients
  

  • 1 whole chicken or 8 chicken thighs Use whole chicken for a traditional approach.

Instructions
 

  • In a large resealable bag or shallow baking dish, combine the olive oil, lemon juice, garlic, thyme, rosemary, smoked paprika, salt, and black pepper. Add the chicken and turn to coat it evenly in the marinade. Cover or seal the bag and refrigerate for at least 2 hours, or up to 24 hours, turning the chicken occasionally.
  • When ready to cook, preheat your oven to 400°F (200°C). Transfer the marinated chicken to a baking sheet or roasting pan and roast for 45-60 minutes, or until the chicken is cooked through and the juices run clear. For best results, use a meat thermometer to guarantee the internal temperature reaches 165°F (75°C).
