  • 1 whole chicken or 3-4 lbs of chicken parts (thighs, breasts, or a combination)
  • 1 medium onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 leaves bay leaves
  • 1 tsp dried thyme

Instructions
 

  • In the Instant Pot, combine the chicken, onion, carrots, celery, garlic, chicken broth, bay leaves, and thyme. Secure the lid and cook on high pressure for 30 minutes.
  • Allow the pressure to release naturally, which will take approximately 15 minutes. Remove the chicken from the pot and shred or dice the meat. Return the shredded chicken to the pot and season with salt and pepper to taste.
