Ingredients
  

  • 4 cups cooked white rice Use day-old rice for best results.
  • 2 large eggs Lightly beaten.
  • 3 tablespoons soy sauce Adjust to taste.
  • 2 tablespoons sesame oil For sautéing.
  • 1 cup frozen mixed vegetables Peas, carrots, corn, etc.
  • 2 stalks green onions Sliced for garnish.
  • 2 cloves garlic Minced.
  • to taste salt and pepper For seasoning.

Instructions
 

  • Begin by heating a large skillet or wok over high heat. Crack the eggs into the hot pan and scramble them, breaking them into small pieces as they cook. Remove the scrambled eggs from the pan and set them aside.
  • In the same pan, add a small amount of sesame oil and sauté the garlic until fragrant. Then, add the cooked white rice, soy sauce, and frozen mixed vegetables. Stir-fry the mixture, incorporating the flavors and allowing the rice to develop a slight char.
  • Finally, add the scrambled eggs back to the pan and continue cooking until everything is heated through. Garnish with sliced green onions and serve hot.
