Ingredients
  

  • 6 pieces bell peppers (any color) Cut in half lengthwise and remove seeds and membranes
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 15 oz can tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil

  • 1 cup shredded cheese (e.g., cheddar or mozzarella) Add during the last 30 minutes of cooking

Instructions
 

  • In a crockpot, arrange the bell peppers cut in half lengthwise and remove the seeds and membranes.
  • In a bowl, mix the ground beef, cooked rice, onion, garlic, tomato sauce, oregano, basil, salt, and pepper. Spoon the filling into the prepared bell pepper halves.
  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the peppers are tender and the filling is cooked through.
  • Top with shredded cheese during the last 30 minutes of cooking.
  • For best results, choose bell peppers that are similar in size so they cook evenly. You can also adjust the seasonings to your taste, and consider adding other vegetables or herbs to the filling for additional flavor.
