Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin

Instructions
 

  • Combine the olive oil, lemon juice, garlic, oregano, coriander, and cumin in a shallow baking dish. Season the chicken with salt and pepper, then add to the marinade and turn to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
  • Preheat grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until fully cooked through. Allow to rest for 5 minutes, then slice or chop the chicken.
