3poundsYukon Gold potatoes, peeled and cut into 1-inch cubes
1cupwhole milk
4tablespoonsunsalted butter
1cupgrated sharp cheddar cheese
1/2cupgrated Parmesan cheese
2wholeeggs, lightly beaten
1teaspoonsalt
1/2teaspoonblack pepper
Instructions
In a large pot, cover the potato cubes with cold water and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the potatoes are tender, about 15 minutes.
Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or a hand mixer until smooth. Stir in the milk and butter until well combined.
Fold in the cheddar cheese, Parmesan cheese, eggs, salt, and pepper until thoroughly incorporated. Scoop the mashed potato mixture into a greased 12-cup muffin tin, filling each cup about 3/4 full.
