Ingredients
  

  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 whole eggs, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • In a large pot, cover the potato cubes with cold water and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the potatoes are tender, about 15 minutes.
  • Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or a hand mixer until smooth. Stir in the milk and butter until well combined.
  • Fold in the cheddar cheese, Parmesan cheese, eggs, salt, and pepper until thoroughly incorporated. Scoop the mashed potato mixture into a greased 12-cup muffin tin, filling each cup about 3/4 full.
  • Let the puffs cool for a few minutes before serving, as the molten cheese can be quite hot.
