Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 piece onion, diced
  • 1 piece red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika

Instructions
 

  • Preheat your oven to 375°F (190°C). Season the chicken breasts with the Cajun seasoning and set aside.
  • In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken and sear for 2-3 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the rice, chicken broth, onion, bell pepper, garlic, thyme, and smoked paprika. Stir to combine.
  • Return the seared chicken to the skillet, nestling it into the rice mixture. Cover the skillet and transfer it to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.

Notes

For added flavor, you can use a store-bought Cajun seasoning blend or make your own by combining paprika, garlic powder, onion powder, cayenne pepper, black pepper, and oregano.
If you prefer a spicier dish, you can increase the amount of Cajun seasoning or add a pinch of crushed red pepper flakes to the rice mixture.
Serve the Cajun Chicken and Rice with a fresh salad or steamed vegetables for a complete and balanced meal.
