Ingredients
  

  • 2 cans (14 oz) artichoke hearts drained and quartered
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber thinly sliced
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard

Instructions
 

  • In a large bowl, combine the artichoke hearts, cherry tomatoes, cucumber, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, and Dijon mustard. Season with salt and black pepper to taste.
  • Pour the dressing over the salad and toss gently to coat.
  • For best results, allow the salad to chill for at least 30 minutes before serving to allow the flavors to meld.
