Ingredients

  • Fudge Brownies:

    • 180 g semi-sweet chocolate chips (1 c.)
    • 113 g unsalted butter (8 tbsp.)
    • 24 g Dutch processed cocoa powder (¼ c.)
    • 200 g granulated sugar (1 c.)
    • 2 eggs
    • 80 g all-purpose flour (⅔ c.)
    • ½ tsp. salt
  • Brown Butter Chocolate Chip Cookies:

    • 113 g unsalted butter (8 tbsp.)
    • 100 g dark brown sugar (½ c.)
    • 50 g granulated sugar (¼ c.)
    • 1 egg, room temperature
    • ½ tsp. vanilla extract
    • 160 g all-purpose flour (1 ⅓ c.)
    • ½ tsp. baking powder
    • ¼ tsp. baking soda
    • ½ tsp. salt
    • 130 g semi-sweet chocolate chips (¾ c.)

Instructions

  1. Make the Brown Butter:

    • Add the 113g (8 tbsp.) of butter for the chocolate chip cookies into a small saucepan set over medium heat. Stir the butter occasionally until it turns amber in color and develops a nutty aroma.
  2. Prepare the Chocolate Chip Cookie Dough:

    • Whisk both sugars into the bowl with brown butter.
    • Whisk in the egg and vanilla extract until well combined.
    • Add in the flour, baking powder, baking soda, and salt. Use a rubber spatula to fold the mixture together just until a few flour streaks remain.
    • Stir in the chocolate chips.
  3. Prepare the Fudge Brownie Batter:

  • In a separate bowl, mix together the melted butter, brown sugar, and white sugar using a wooden spoon or hand mixer.
  • Beat in eggs and vanilla extract.
  • Add cocoa powder and mix until combined. Stir in flour and salt until flour is incorporated. Stir in chocolate chips.
  1. Assemble the Brownies:

    • Pour half of the brownie batter into your prepared square pan, smoothing it into an even layer.
    • Use your hands to tear up pieces of cookie dough. Flatten them in your hands, then place them on top of the brownie batter, trying to form a flat, even layer of cookie dough on top of the brownies. Use approximately 2/3 of the cookie dough for this layer.
    • Pour the remaining brownie batter over the cookie layer, smoothing it out into an even layer.
    • Tear up the remaining pieces of cookie dough, scattering them on the top layer (It will not fully cover the brownies – this is what we want so that the top is marbled!).
  2. Bake the Brownies:

    • Bake at 350°F (175°C) for 40-45 minutes, until the edges have set and the middle is only slightly wobbly.
    • Allow the brownies to set in the pan until they come to room temperature.
  3. Serve and Enjoy:

  • Once cooled, slice into bars and serve. These brownies are best served with a scoop of vanilla ice cream or a drizzle of caramel sauce for an extra-decadent treat.

Top Tips

  1. Use an Oven Thermometer: Every oven is different, so using an oven thermometer ensures your brownies are baked to perfection.
  2. Don’t Overmix: Mix the cookie dough just until the ingredients are combined. Overmixing can lead to tough cookies.
  3. Cover with Foil: If the cookies are browning too quickly, cover the pan with foil to prevent burning.
  4. Let Cool Completely: Allowing the brownies to cool completely in the pan helps them set properly and makes slicing easier.
  5. Customize with Toppings: Add nuts, sprinkles, or even caramel sauce to take these brownies to the next level.
  6. Reheat with Care: If reheating, use a low heat setting to avoid burning the cookies.

Variations

  1. Nutty Chocolate Chip Cookie Brownies: Mix in your favorite nut (walnuts or pecans work well) into both the cookie dough and brownie batter for added crunch and depth of flavor.
  2. Mint Chocolate Chip Cookie Brownies: Add a few drops of peppermint extract to the cookie dough and sprinkle crushed candy canes on top for a festive twist.
  3. Peanut Butter Cup Brownies: Pour a layer of melted peanut butter cups on top of the brownie batter before adding the cookie dough.
  4. S’mores Brownies: Crush graham crackers and mix them into the cookie dough. Layer mini marshmallows on top of the brownie batter before adding the cookie dough, then sprinkle extra graham cracker crumbs on top.
  5. Double Chocolate Brownies: Swap out the chocolate chips in the cookie dough for white chocolate chips. Drizzle melted white chocolate on top for an extra-decadent treat.
